I read Rose Elliots Beanfeast a few years ago, She wrote that combining foods can create whole proteins that you lack in your diet. Two combinations I can remember where Brown rice and sunflower seeds or Potatoes with dried skimmed milk powder.
Eggs are a good one as is soya protien. If you dont like the taste of tofu try putting it in a curry.
I had a friend who was vegan who used to by protein powder to add to stuff.
tiredness could also be down to lack of iron, Eating your greens like broccoli could help and your green leaf salads should help too.
